MANGO AND MIXED SALAD
For the seasoning:
3 tablespoons balsamic vinegar
5 tablespoons of extra virgin olive oil
1 tablespoon wine vinegar
Salt and pepper.
Peel the mango and cut it into not very small cubes. Cut the melon in half, remove the seeds and, with a corer, form many balls of pulp.
Wash and clean the mixed salad and rocket well. Clean the cherry tomatoes and cut them into segments. Peel the carrots and cut them into thin matchsticks.
Arrange a bed of mixed salad and rocket on the plates. Place the cherry tomatoes, carrots, diced mango and melon balls on top.
Season well with balsamic vinegar, olive oil and white wine vinegar, lightly salt and pepper and serve immediately.
