  • 500g of lampascioni
  • extra virgin olive oil
  • vinegar to taste
  • Salt to taste
  • pepper as needed

Step 1:

Clean the lampascioni by eliminating all the earth, cut the tip and also the skin that covers them, lastly also the root

Step 2:

To remove their bitter taste, it is advisable to leave them overnight in a basin of water and rinse them the next day.

Step 3:

Boil the water in a saucepan, add the salt, when it boils immerse the lampascioni and check them with a fork from time to time, they must be fragrant but not mushy!

Step 4:

Place a saucepan on the heat and bring it to temperature, stew the lampascioni in it until they are cooked, about 20 minutes!

Step 5:

Finally, let them drain briefly, season them with a drizzle of extra virgin olive oil, a little salt, pepper and a drop of vinegar, then serve them!
