Lemon chicken with courgette flowers


Ingredients for 4 people

For the chicken:

600 g of chicken breast
8 small flowered courgettes
2 untreated lemons
2 spring onions
1 clove of garlic
1 bunch of basil
1 sprig of parsley
3 tablespoons of extra virgin olive oil
Salt and pepper.

Cut the chicken into thin slices. Remove the flowers from the courgettes, wash them and cut them into small pieces.

Clean the flowers, wash them and drain them.

Cut 1 lemon into small pieces, then grate the last of the other lemon and
squeeze the juice out.

Wash and slice the spring onions and peel the garlic.

Sauté the chicken for 5 minutes in a pan with the olive oil, courgettes, garlic, chopped herbs and lemon pieces.
Wet everything with the lemon juice, add salt and pepper and cook for another 2 minutes. Add the courgette flowers and lemon zest. Remove from the heat and serve.
