Sauteed vegetable noodles


Ingredients for 4 people

For the "tagliatelle":
2 courgettes
2 carrots
1/2 yellow pepper
1/2 red pepper
4 asparagus
1 piece of leek
4 tablespoons of extra virgin olive oil
Salt and pepper

Wash all the vegetables well, peel the carrots and asparagus, removing the hard part of the stem.
With a sharp knife, remove the internal filaments of the peppers and cut them into thin strips. Cut the courgettes in half lengthwise, remove the central part with the seeds and cut it like the pepper.
Trim the carrots and cut many strips with the carrot peeler. Also finely slice the asparagus and keep all the vegetables in cold water.
Heat the olive oil in a pan with the white part of the leek finely sliced ​​lengthwise; season and add all the well drained and dried vegetables. Cook for 5 minutes, saving and adding pepper and serve immediately.
