COURGETTES IN VINEGAR
1/2 glass of red vinegar
2 cloves of garlic
1 tablespoon oregano
2 tablespoons extra virgin olive oil
Gently scrape the courgettes, wash and cut them into rounds. Heat some seed oil in a non-stick pan and once hot, fry the courgettes.
Drain the courgettes when they are golden and add salt.
In a serving dish, arrange a layer of fried courgettes, sprinkle with finely sliced garlic, chopped oregano and complete with a splash of vinegar.
Make other layers until all the courgettes are finished. Finish by pouring in the remaining vinegar.
Drizzle the dish with a drizzle of olive oil, sprinkle with basil leaves and bring to the table.
